Watermelon Rind Stir Fry recipe – Kummattikka Ularth

You have to take only the white part after removing the outer thick green covering (skin) of the watermelon. The recipe is a typical Kerala style stir fry called ullarthu in Malayalam.

With regard to nutrition of watermelon rind, it contains large amount of citrulline, an amino acid which has many health benefits. Watermelon rind is rich in vitamin c, beta carotene and lycopene which prevents lung and intestine cancer.

You can even make watermelon rind pickles which can be kept in glass container and can be consumed for long period.

Ingredients

  • 2 cups finely chopped watermelon rind (take the white part only by removing outer green layer)
  • Mustard seeds - 1/4 tbsp
  • Chopped shallots - 1/4 cup
  • Chilli flakes - 1 tbsp
  • Curry leaves - 10 nos
  • Coconut oil - 4 tbsp
  • Salt to taste

Method

Step 1

Heat oil in a thick bottomed pan and splutter mustard seeds.

Step 2

Shallow fry chopped shallots and add chilli flakes and curry leaves.

Step 3

Once shallots are translucent add watermelon rind and mix well.

Step 4

In low flame cook the watermelon rind for 15 minutes. Stir after each 2 to 3 minutes. No need to add water as enough water is present in watermelon rind itself.

Step 5

When the watermelon rind is cooked add salt to taste and mix well. Switch of the flame. Our Watermelon Rind Stir Fry or Kummattikka Ularthu is ready to eat with parboiled rice or roti of your choice.
