Prawns Ghee Roast Recipe

Prawns Ghee Roast is a very popular dish in Mangalore. This spicy prawns fry is an excellent side dish for Biriyani, Fried Rice. It also goes well with Chapati and Naan. It is easy to make and can be served as an appetizer also. In this Prawns Fry recipe, we are first going to remove the moisture from the prawns by cooking them over a low heat and once they lose all their moisture, the prawns will be used in the recipe. The masala paste enhances the taste of the prawns and it makes the side dish tangy and spicy.

Ingredients

  • Prawns - 500 gm
  • Kashmiri chilly - 7 nos
  • Dry red chilly - 5 nos
  • Fennel seeds - 1 tsp
  • Cumin seeds - 1 tsp
  • Pepper corns - 1 tsp
  • Coriander seeds - 1 tsp
  • Ginger - 1 piece
  • Garlic - 4 cloves
  • Lemon juice - 1 tbsp
  • Onion - 1 no
  • Ghee - 5 tsp
  • Curd - 5 tsp
  • Turmeric powder - 1/4 tsp
  • Water - 4 tsp
  • Curry leaves
  • Salt to taste

Method

Step 1

De-shell and de-vein the prawns and wash well with water.

Step 2

Heat a pan and add prawns with some salt and turmeric powder. Saute it without adding any water or oil for some time, until all the water content from the prawns is gone. Switch off the flame.

Step 3

Heat a pan and dry roast kashmiri chilly, coriander seeds, pepper corns, fennel seeds, cumin seeds and dry red chilly until the colour changes.

Step 4

Transfer all the ingredients to a blender along with ginger, garlic, lemon Juice, water and grind it to a smooth paste.

Step 5

Heat ghee in a pan, add chopped onions and salt into it and cook until the onions are translucent.

Step 6

Add ground masala paste and curd into it and mix well with the onions. Cook the masala for 10 minutes on a low flame.

Step 7

Add curry leaves and cooked prawns into it. Mix it well with the masala mixture and cook for another 5 minutes on a low flame. Switch off the flame.

Step 8

Delicious Prawns Ghee Roast is ready.
