Turkish Delight has a soft, delicate, jelly-like consistency and is flavored with rosewater. Turkish delight or lokum is a family of confections based on a gel of starch and sugar. Premium varieties consist largely of chopped dates, pistachios and hazelnuts or walnuts bound by the gel; the cheapest are mostly gel, generally flavored with rosewater, mastic, or lemon.

In English, it was formerly called lumps of delight. Turkish Taffy is a packaged nougat candy sold in the United States from the 1940s through the 1980s.

Turkish Delight recipe is a traditional version of the classic Middle Eastern sweet. The resulting candy is delicately chewy and scented with rosewater. Real, good Turkish delight is soft, slightly chewy and lightly fragrant.

This is a very simple delight made in the microwave. Turkish delight is a sweet made with starch and sugar. The sweet inner gushing bite is tempered by the not-quite-sweet starchy outer sugar that, like a pleasant detergent, washes the cloying syrupiness away.

Ingredients

  • Sugar - 2 cups
  • Water - 3 cups
  • Gelatine - 4 tbsp
  • Cornflour - 2/3 cup
  • Icing sugar - 1 1/2 cups
  • Cream of tartar - 1/4 tsp
  • Rose water -1 /2 tsp
  • Food colour - 3 dropes
  • Icing sugar - 3/4 cup

Method

Step 1

Mix water, sugar and gelatine in a large microwave safe dish.

Step 2

Microwave this on high for 7 minutes. Stir well, cook this for a further 7 minutes.

Step 3

Then add icing sugar, cornflour and cream of tartar and mix well. Microwave this mixture on high power for another 6 minutes.

Step 4

Then add rose water and food colour and mix well. Pour this mixture into lightly oiled 18 x 28 cm tin or any tray.

Step 5

Refrigerate this for 1 hour. After 1 hour cut into small logs using a wet knife. Toss in icing sugar. Store in an airtight container in the refrigerator.

Step 6

The delicious Turkish delight is ready to be served.
