Pumpkin is a good source of vitamins, minerals, fiber, and antioxidants. It has less amount of sugar and starch. An ideal low carb vegetable.

The real twist in this recipe is the pumpkin pie spice which gives the savory taste. Pumpkin pie spice, by name may recall Pumpkin but the fact is that, it doesn’t contain any pumpkin. Pumpkin pie spice is a combination of spices; cinnamon, nutmeg, ginger and allspice.

Ingredients

  • Dry unsweetened gelatin - 1 envelope
  • Water - 1/4 Cup
  • Pumpkin pie spice - 2 tsp
  • Unsweetened canned pumpkin - 1 1/2 cup
  • Heavy cream - 1 1/2 cups
  • Granular sugar substitute (sucralose) - 1/2 Cup
  • Vanilla extract - 2 tsp

Method

Step 1

Dissolve gelatin in cool water in a small bowl. keep it aside for 5 minutes until gelatin softens.

Step 2

Meanwhile, toast pumpkin pie spice in a fry pan for 2 minutes. Stir it continuously. Reduce heat to low and pour gelatin mixture into it and cook 2 minutes more, until gelatin melts.

Step 3

Remove the pan from the heat and allow it to cool to room temperature.

Step 4

Pour pumpkin puree in a large bowl.

Step 5

In another large bowl, with an electric mixer on high, beat cream, sugar substitute and vanilla until soft peaks form. With a rubber spatula, slowly fold this into cooled gelatin mixture.

Step 6

In three additions, gently fold whipped cream mixture into pumpkin puree.

Step 7

Pour mousse into the glasses.

Step 8

Refrigerate the pumpkin mousse for 2 hours.

Step 9

Yummy Pumpkin Mousse is ready.

Step 10

Decorate the mousse with heavy cream.
