Vazhuthananga Thoran Recipe

Vazhuthananga Thoran is a dry side dish served with rice. Thoran or Upperi refers to stir-fry, seasoned with coconut, curry leaves and mustard seeds. It is a usual preparation in the lunch menu of Kerala. It is very easy to prepare and goes well with Rice.

Being a good source of vitamins, minerals, antioxidants, dietary fibers and other compounds, they are very beneficial for us and provides a lot of health and beauty benefits. Brinjals are great for weight loss as they are low in calories with 100 gm of the vegetable containing just 25 calories.Further, this vegetable is also an excellent source of minerals like manganese, copper, iron and potassium.

Brinjal contains potassium, an important mineral, which plays a key role in maintaining electrolyte balance in the body. It also helps in neutralizing the effects of sodium on the body thereby aiding in blood pressure control.

Ingredients

  • Brinjal (vazhuthanaga, വഴുതനങ്ങ) - 2 nos
  • Grated coconut - 300 gm
  • Green chilly - 5 nos
  • Shallots - 4 nos
  • Turmeric powder - 1/4 tsp
  • Mustard seeds - 1/2 tsp
  • Curry leaves - a few
  • Coconut oil - 4 tsp
  • Salt to taste

Method

Step 1

Clean and cut the brinjal into small size pieces and put it in water. Squeeze the brinjal well and keep aside.

Step 2

Coarsely grind the grated coconut with green chilly, shallots, turmeric powder with a mixer grinder.

Step 3

Heat 4 tsp of coconut oil in a pan, add mustard seeds and curry leaves.

Step 4

Once the mustard seeds start to splutter, add the coconut mix to this and mix well.

Step 5

Add brinjal / vazhuthananga and salt. Stir well for 3 minutes. Cover with a lid and cook for 10 minutes on a low flame.

Step 6

Open the lid and stir well till it is dry. Switch off the flame.
Tasty Vazhuthananga Thoran is ready.
